TRAER – The delicious smell of slow-cooked pulled pork combined with the sizzle of caramelizing tortillas are just some of the experiences you would have encountered if you had visited The Cheesy Pig pop-up “food truck” at the North Tama Redhawk Sports Complex last Wednesday, May 27. The impressed murmurs coming from patrons would have you convinced that this was the new up-and-coming restaurant, and you’d be half right! This pop-up “food truck,” as the group refers to it, is actually run completely by the North Tama Family, Career and Community Leaders of America (FCCLA) chapter.
While advisor Rachel Donaldson helped with the finer details, the student-led group created the concept, mascot and menu on their own, which boasts several items including a pulled pork quesadilla and barbecue aioli.
“It has been great. It means a lot that I can be a part of the whole process, it feels like we actually own a food truck,” stated line cook and FCCLA officer Myah Finzen.
If you missed out, don’t worry! The Cheesy Pig is currently in the process of determining possible future dates to again serve up their one-of-a-kind cheesy dishes.
